Day 75: Celebrate St. Patrick’s Day

I’ve never celebrated St Patrick’s day before. Ever.  Oh wait, when I was in college I worked with seniors and on St. Patrick’s day we made corned beef and cabbage.  I don’t know if that counts or not. But was it corned beef?  I remember it looking and tasting like ham.  Remember when I ate ham?  Mmmm, ham.  Anyway, I found a recipe for vegetarian Irish stew and made that. Here are all the ingredients gathered together.  I could really see the benefit of an ipad for following a recipe.

I purposely omitted the tapioca because I didn’t feel like my food needed a “glistening sheen” and I left out the miso because I didn’t want to spend too much time wandering around the grocery store trying to find it. I also didn’t pay attention to the amount of tomato paste that was supposed to go in until after I had put in the whole can. 1/2 a cup of beer only ends up being about a quarter of the bottle.  As a non beer drinker I just dumped the rest of it down the sink which probably seems blasphemous to those who like beer. Here is the finished product.

Now I’m going to drink some Bushmills and watch Waking Ned Devine.
